Elise and Kevin made these for me for the first time over 15 years ago on St. Patrick's Day and I fell in love. Kevin's family has deep Irish roots and this is a cool recipe that he and his family have shared with us. We have started making pasties each St. Patrick's Day as a new tradition... but we don't make them exclusively on St. Patty's (they are just too good to only have once a year)! A special THANKS to the Donovan family for sharing their recipe!
There are many different ways of making these, you can use leftover Sunday roast and gravy instead of ground beef (our favorite way) or you can make your own dough (which is how the Donovans originally made it) and you can wrap the dough around the filling any way you like. I am just posting the lazy way :)
1 onion, diced
butter
1 Lb. ground beef (you can use shredded crock pot roast instead)
3-4 potatoes, thinly sliced (you can also use bagged frozen, cubed hash browns)
1-2 tsp. garlic salt (or to taste)
1-2 Tbsp. garlic powder (or to taste)
black pepper, to taste
2-3 Tbsp. parsley flakes (or to taste)
1 box pie crusts (the kind that has 2 crusts per package and is found by the biscuits in the refrigerated section of the grocery store)
brown gravy, prepared (we just use the cheap packaged kind)
Preheat oven to 450 degrees. Saute onion in a little bit of the butter. When onions are clear, add ground beef. When beef is browned, stir in potatoes. Add garlic salt, garlic powder, pepper, and parsley. Cook until potatoes are a little soft (you can skip this part if you are using the frozen hash browns), but still have a TINY crunch (it will cook completely when it is baking). Unroll the pie crusts and put a good amount of the filling on half of the crust. Fold the crust over the filling, seal, and place on a greased cookie sheet (so it looks like a big calzone). Repeat with second crust. Make a couple small slits in the top of each crust. Place in pre-heated oven for 14-20 minutes or until crust is golden brown. Remove from oven, spread a little butter over the top, cut in half, and serve (each pie crust will make 2 pasties, so 4 total..). Serve with gravy, or my Dad's personal favorite.. KETCHUP! I like it both ways.

Our family, of Scottish descent, makes a similar pastie (pronounced the "right" way) but with carrots and no parsley. We love it. Your version looks well worth trying.

Irish pasties are with pork and battered and fried. I cannot fin a good traditional Irish recipe inline - perhaps it is a secret? I will have to find ours and post one dy!
