This mafa chicken is actually Beau’s Mom’s recipe. It has been a secret family recipe of theirs for years and years and they finally allowed us to post it on FavFamilyRecipes.
It is a family tradition of ours to make this on Christmas Eve, we actually make an entire Chinese dinner but mafa is always a staple! My husband especially loves this the next day cold (that’s if there are any left over!). They kind of resemble the nuggets at Chick-fil-A, but they are SO much better. This is truly a favorite family recipe! Thank you Walker family for sharing!!!
Ingredients
- 1 package Tofu
- 1/3 c. soy sauce
- 1/3 c. sugar
- 5 to 6 Garlic Cloves
- 5-8 Chicken breasts
- 2 eggs
- Wondra Flour
- Oil (for frying)
- ¼ c. honey
- 1/2 c. mayonnaise
- 2-3 Tbsp. Dijon Mustard

Instructions
- Blend batter ingredients thoroughly in blender til you have a smooth mixture. Cut up chicken breasts into chicken nugget size pieces and marinate in the above mixture in the fridge overnight. Before cooking stir 2 eggs into the mixture and coat each piece of chicken in “Wondra” flour. Deep fry at about 350 degrees until pieces are brown and thoroughly cooked.
- For the dipping sauce, mix mayonnaise, honey and mustard. Chill and serve.

Hmm, sounds great. But what is wondra flour?
It is in a tall blue container by the regular flour. It is like regular flour but a much finer consistency.
I had mafa chicken growing up it was a fav ~ it was served at a chinese restaurant and everything there was the best, when I was 20~ a friend of mine was a chef there and gave me the recipe … somehow i lost it,:( I tried to make it many times but there was always something missing … Reading this, I think it's the sugar. i remember the recipe being ridiculously easy and fantastically delicious. Thank you Beau’s mom! I friend of mine from Idaho gavee me this recipe about twenty years ago and after my last move I lost it. I could never quite remember past the tofu or the soy sauce! I have been craving true Mafa chicken since forever! This recipe is the exact one she gave me and just as delicious as I remember. I like it hot but it is is also so delicious cold the next day! If there is any left, I mean. Thank you!
Which tofu, soft, medium or firm?
We use firm tofu.
I can’t wait to try this. Have you ever tried it without frying the chicken after marinating it? I am wondering how it would taste grilled.
I can honestly say we have never tried baking it, we always fry them. Let me know how they turn out if you try it.
