Bite Sized Sloppy Joe made in a Biscuit

I got this idea from my good friend, Lexi. Her family grew up having these (her family actually calls them “bear claws” but I didn’t want to confuse anyone searching for pastries so we call them Sloppy Joe Biscuit Cups. They are delicious! It’s basically just a fun and different way to have Sloppy Joes. One of my favorite things about them is they aren’t quite as sloppy as Sloppy Joes but the kids gobble them up just the same! I love the taste of the biscuit with the sloppy Joe mix and  the melted cheese over the top. Definitely worth a try if you are in the mood for a quick and easy (and cheap) dinner!

Ingredients in Sloppy Joe Biscuits

  • ground beef
  • onion – finely chopped (optional)
  • refrigerated biscuit dough
  • sloppy Joe sauce – Our Homemade Sauce or canned
  • shredded cheddar cheese – I like sharp cheddar best

Life Outside the Bun

There are a lot of ways people are trying to live outside the bun these days. Not that we think there is anything wrong with a bun! But for those cutting carbs, using a lettuce leaf for one, or both, sides of your hamburger, it can be a tasty way to still take part in the backyard barbecue. However, in the case of these Sloppy Joe Biscuits, we’re not looking to change the carb count, we just love the idea of making something unique and fun based on a very traditional meal.

Sometimes all you need to take dinner from ordinary to super-exciting is to mix up one of the key ingredients. In this case, the bun. Just watch how much fun it is for kids to try something that seems just a little more creative than you usually serve.

It consists of condensed tomato soup, ketchup, yellow mustard, brown sugar, salt and pepper, and a little cayenne pepper.

Should I do anything to make sure the biscuits don’t stick to the pan?

If you’re worried about the Sloppy Joe Biscuits sticking to the pan while in the oven, you can grease the muffin tin with cooking spray or butter. Or if you want to avoid extra clean up you can even use muffin cups.

What if I want to make these for adults instead of kids?

If you want to make a fancier or more “adult” version of this recipe you can stir in some different ingredients and spices to your sloppy joe meat for added flavor. Such as fresh garlic or garlic powder, onion powder, worcestershire sauce or even some bell pepper. Even without a sprinkle of extra spices, this sloppy joe biscuit bake is just as good as is with the sauce and shredded cheese.

  • In a large skillet, brown beef and onion. Add sloppy joe sauce and simmer on low heat for about 5 minutes. 
  • While beef mixture is simmering, open biscuit dough and press individual biscuits into a greased muffin tin forming a “cup”.
  • Place a scoop of beef mixture into the center of each biscuit cup and bake at 350-degrees for about 15-20 minutes (take them out when the edges are a deep, golden brown). 
  •  Immediately top with cheese, then serve!
