I realize this is a very simple recipe but that doesn’t make it any less delicious. This is our family’s favorite way to make nacho cheese. It is a staple around football season. For a meatier version cook up some ground Italian sausage, pat off excess grease and stir in after the cheese is melted.
Ingredients
- 1 lb. Velveeta Cheese
- 1 can Rotel Tomatoes (tomatoes and green chilies)
Instructions
- Slice the cheese into cubes and put in a large bowl. Pour in entire can of Rotel Tomatoes. Melt in microwave on high, stirring every 2 to 3 minutes until fully melted.
- Serve with tortilla chips.

Take this recipe over the top by adding 1lb of browned and drained Jimmy Dean sausage!
1 lb. hamburger
1 lb.velveeta cheese
1 can rotel tomatoes
1 tsp. chili powder
1 tsp. worcestershire sauce
this is how i use velveeta for my dip.
