These chicken skewers are fantastic. The Thai flavor is so good complemented with the yogurt sauce for dipping. I am completely in love with Thai and Indian flavor dishes, if you have been too nervous to step out of your food comfort zone these skewers are a great place to start. Try them out for your next BBQ, you will not be disappointed! Great as an appetizer or a main dish.
Ingredients
- 3 to 4 chicken breasts
- wooden skewers
- 2 tsp. minced garlic
- 1/2 bunch of fresh cilantro
- 2 Tbsp. fish sauce
- 1 Tbsp. sesame oil
- 2 tsp. curry powder
- 2 tsp. cumin
- 2 tsp. paprika
- 1 c. plain greek yogurt
- 2 tsp. chopped cucumber
- 2 tsp. chopped carrot
- 1 tsp. chopped cilantro
- 1 tsp. milk
- salt to taste
Chicken Marinade
Cucumber Yogurt Dip
Instructions
- Blend all the chicken marinade ingredients in a food processor or good blender.
- Cut the chicken breasts into 4 to 5 long strips. Place strips into a large bowl, stir in the marinade, and refrigerate for at least 30 minutes.
- Combine all the yogurt dip ingredients in a medium size bowl and refrigerate.
- Thread the chicken onto the wooden skewers (if you prefer the skewers to not get charred you can soak them in water while the chicken is marinating) and grill over medium heat until cooked through.
- Serve chicken with a side of yogurt sauce for dipping.

What did you serve as side dish(es) with this? I’m looking forward to trying them with something that will greatly complement this dish.
These would be great with a salad or potato dish as a side. Have you tried our Parmesan Potato Halves?
They would honestly be best with our Indain Coconut Rice, but that recipe is exclusive to our cookbook (coming out in just a few weeks!)

Just wanted to say this was the first recipe we’ve tried from your website and we loved it. I was a little concerned that there was so little liquid in the marinade and added some lemon juice. Ended up very tasty!
