Twice-baked potatoes are simple to make and taste amazing! This potato recipe has a slight twist when adding in shredded bbq ribs to create one of the best types of twice-baked potatoes. You will need ribs, a creamy mixture for the potatoes, and toppings to garnish with. It is so simple to layer and comes together quickly!

  • Ribs – Boneless beef country-style ribs are just what you need to make this the best bbq twice baked potatoes.
  • Barbecue sauce – Make your own homemade bbq sauce or store-bought. Pick your favorite brand and kind and you will love how delicious these ribs turn out.
  • Potatoes – Medium sized russet potatoes are best! The outer skin holds together and can withstand the heat compared to other types of potatoes.

  1. Cooking ribs – Place ribs in slow cooker and cover with BBQ sauce. Cook on low for 8 hours (or 4 hours on high). Remove from slow cooker and shred, return to slow cooker and keep warm until ready to serve. About an hour before serving bake potatoes.
  2. Baking potatoes – Take baked potatoes and cut an oval hole, lengthwise, from the top. Scoop out the potato, leaving a small amount of potato around the edges (you don’t want to scoop out too much and rip a hole in the skin).
  3. Add-ins – Place the potato “scooping” into a medium-sized bowl and add butter, ranch dressing, sour cream, salt, pepper, chives, and cheese.
  4. Layer the potatoes – Mash together with a fork until well mixed. Place mashed potatoes evenly back into the potato skins and make a depression in the top with the back of a spoon. Spoon a large scoop of shredded beef into the top of the potato and top with extra shredded cheese.
  5. Finish cooking – Place back in 350-degree oven for about 15 minutes or until potatoes are hot all the way through.
