This Easy Ice Cream Sandwich Cake only takes about fifteen minutes to make and is always a crowd pleaser! Layers of pre-made ice cream sandwiches, a fluffy layer of Cool Whip and hot fudge and caramel sauce on top. My kids love making this no bake cake for family dinners because they can help with every process and be very proud of their work. You simply cannot mess this up. It’s the perfect dessert for warm summer picnics, barbecues, and it makes a fabulous birthday cake! Such a fun and EASY dessert!

Try this easy ice cream sandwich dessert recipe for your next birthday party or summertime gathering. Such a hit and tastes so yummy! Here’s what you need:

  • Ice cream sandwiches – The first layer of this cake is 24 ice cream sandwiches. You can use regular vanilla ice cream sandwiches or try chocolate ice cream, strawberry ice cream or combine all three flavors with Neapolitan ice cream sandwiches.
  • Cool-Whip – a 16-ounce tub works great.
  • Hot fudge – one jar of your favorite brand of fudge chocolate sauce. Make sure it’s at room temperature so it’ll drizzle down nicely.
  • Caramel sauce – one jar. It’s optional but adds a delicious layer of flavor to the dessert.
  • Unsalted peanuts – just a few handfuls

Tips for Layering this Ice Cream Sandwich Cake

  • Start with some good ice cream sandwiches. There are super cheap options out there, but since this is the star of the show, I like to use nice and thick sandwiches. You’ll need about two dozen.
  • If you have time, try to freeze each layer in parchment paper before you stack another layer on top. This helps the whipped topping layers stay firm and keeps it from sliding around as you layer your cake.
  • Microwave your jar of hot fudge sauce just a few seconds if needed to aid in the drizzling process. But don’t get it too hot; you don’t want to melt the ice cream or whipped cream.
  • This recipe calls for a 9×13 baking dish but you can use any pan you like. You can even do triple layered cake slices using a loaf pan.
  • This cake can be made a few days in advance and stored in the freezer.

I love using hot fudge, caramel and some unsalted peanuts as toppings on this cake, but the options are endless!

  • Sprinkle pecans, almonds, Reese’s pieces, M&Ms, crushed Oreos or other chopped candy bars over the top of the cake.
  • Layer M&Ms, chocolate chips, crushed toffee bars, peanut butter cups, sprinkles, butterscotch chips, just about any candy you like in between layers of ice cream sandwiches and whipped cream.
  • And just about any sundae toppings taste delicious! Caramel, butterscotch, hot fudge, mint chocolate, cherry syrup, the sky’s the limit!
  • Layer Oreo cookies or other cookies in with the ice cream sandwiches.
