Evelyn's SalsaMy friend Evelyn brought this over and it was a huge hit. This is such a refreshing, Summertime salsa.  My kids love this salsa because it has no onions and I love the tangy flavor from the balsamic vinegar.  Thanks Evelyn for sharing your recipe!

Evelyn’s Salsa

  • 1 can (16 oz.) black beans, drained and rinsed
  • 1 1/2 c. fresh tomatoes, diced
  • 1/2 bunch cilantro
  • 3 Tbsp. balsamic vinegar
  • 1 Tbsp. oil (optional)
  • 3 Tbsp. lime juice
  • 1 1/2 jalapenos, diced and seeded
  • 1/4 tsp. tabasco sauce
  • 1/2 tsp. salt (or to taste)
  • 1/2 tsp. pepper
  • 1 tsp. crushed garlic


  • In a large bowl, mix all ingredients together. Refrigerate at least an hour before serving. Serve with tortilla chips.
