Almond Joy Brownies from favfamilyrecipes.comMy husband, admittedly, isn’t much of a dessert person.  Crazy, I know!  But he LOVED these almond joy brownies!  The first time I made this recipe I didn’t take a picture because it all got eaten up too fast, this time I had to keep everyone off the brownies until I got my picture first.  Now, if you really want to make these all the way from scratch, we have an awesome fudge brownie recipe in our cookbook, but I made these easy style and used a package of fudge brownies for my base.  Either way is so good.  I love how the coconut almond layer becomes a toasty top to the brownies, then we like to drizzle chocolate and extra coconut when it’s done.  I use a similar coconut filling to that of our Homemade Almond Joys, if you haven’t tried those,  I highly recommend!
Almond Joy Brownies

Almond Joy Brownies

Ingredients

  • 1 box of your favorite fudge brownie mix (or your favorite brownies from scratch)
  • 1/2 c. white Karo (corn) syrup
  • 1/4 tsp. salt
  • 10 large marshmallows (exactly 10 or the consistency is off)
  • 2 c. coconut
  • 1/2 tsp. vanilla
  • roasted almonds, chopped
  • 1 bag Ghiradelli milk chocolate chips (they are worth the extra money)

Instructions

  • Mix up your brownie mix and pour into a sprayed 9x13 inch pan.
  • In a heavy sauce pan (over medium on the stove) heat syrup, marshmallows, and salt until marshmallows are melted. Continue to stir over heat for an additional minute. Remove from stove and add coconut, vanilla, and chopped almonds. Stir well and dollop this coconut mix all over the top of the brownie mix, it doesn't need to be completely covering the top, just evenly distributed.
  • Bake the brownies according to the regular directions.
  • When there is about 5 minutes left, begin melting the chocolate chips. I like to do this by putting them in a metal bowl and placing the bowl over a pot of boiling water. Stir until chocolate is melted and smooth.
  • When you remove the brownies from the oven, drizzle all over with the melted chocolate and sprinkle with some extra coconut flakes.

Mom's Crock Pot Mexican Shredded Beef from FavFamilyRecipes.com

This is our go-to shredded beef recipe, I simply love it! I had posted this years ago on our site (in 2008 to be exact) and it wasn’t getting the attention it deserved so I am re-posting it! At home we actually call it “Mom’s ‘Lake Powell’ Beef” because she would always make it beforehand, freeze it, then cook it up over a camp stove when we would go camping at Lake Powell. It is so versatile! You can prepare pretty much any Mexican dish with it (burritos, enchiladas, tacos, taquitos, nachos….) and it is a great switch-up from your typical chicken or ground beef.

This makes quite a bit so we usually make it up and freeze it in little individual freezer bags. It stays good for up to 2 months in the freezer. To re-heat, just throw it in pot and stir until hot. I promise, it tastes just as good as it does the day you make it! We ALWAYS bring this on our camping trips. We just heat it up and serve with tortillas. It is so easy and clean-up is a breeze.

**You can also make this shredded beef by using leftovers from your Sunday roast. Just shred up the leftovers and add them to the crock pot with the picante sauce for an hour or so.

Ingredients

  • 3-4 Lbs. lean roast beef
  • 1 pkg. onion soup mix
  • 2-3 c. water
  • 2 c. Pace Picante sauce (or your favorite picante sauce)
  • salt and pepper, to taste

Instructions

  • Sear the roast on all sides. Add to crock pot and sprinkle with onion soup mix and add 2 c. water. Cook in crock pot on low for 7-8 hours, keep an eye on it and add more water as necessary. Make sure there is always about 1-2 cups of liquid in there. Do not let the water cook out!
  • After meat is cooked, remove beef from Crock Pot and shred, removing any excess fat.
  • Return the meat to the crock pot and add picante sauce & salt and pepper. Cook on low for another 30 minutes. Meat should be moist and juicy.

I am never making omelettes the old way again!  These omelette roll ups are so much easier and taste every bit as good!!!  I don’t know about you but I struggle with making an omelette look good, it always breaks on me and sticks to the pan!  And then there is the issue of them being difficult to feed several people because you can only cook them up one at a time.  If you are anything like me, you are going to LOVE this method!!!  The egg literally slides right off the pan and rolls up so beautifully.

Omelette Roll Ups

Omelette Roll Ups

Ingredients

  • 1/2 c. milk
  • 1/4 c. flour
  • 6 eggs
  • salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • Your favorite omelette toppings (such as):
  • bacon or sausage or ham
  • tomatoes
  • onions
  • peppers
  • spinach
  • avocado

Instructions

  • Preheat oven to 450 degrees. In a medium size bowl beat together the milk and flour. Add the eggs, salt, and pepper and beat until it is well blended. Pour the egg mix into a 9x13 glass pan lined with cooking spray.
  • Bake in preheated oven for about 6 to 7 minutes, the layer of egg should be fully cooked, no runny spots.
  • Top the egg with cheese and your favorite omelette toppings, for ours we did bacon and tomatoes. Return to oven for one minute, or until cheese melts.
  • Remove from oven and use a rubber spatula to loosen up the sides. You can roll it from either the long end or short end, depending on how big of rolls you want.
  • Roll up and slice into individual servings. If desired, top with sour cream and salsa.

Crock Pot Cashew Chicken

Ingredients

  • 2 lbs boneless skinless chicken breasts (About 4 pieces), cut into smaller pieces
  • 1/4 cup all purpose flour
  • 1/2 tsp black pepper
  • 1 Tbsp canola oil
  • 1/4 cup soy sauce
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp ketchup
  • 1 Tbsp brown sugar
  • 1 garlic clove, minced
  • 1/2 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes
  • 1/2 cup cashews

Instructions

  • Combine flour and pepper in resealable food storage bag. Add chicken. Shake to coat with flour mixture.
  • Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker.
  • Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken.
  • Cook on LOW for 3 to 4 hours. Add cashews and stir.

Oh my goodness!  These Caprese Chicken Sliders were so incredibly tasty!  We made these for a fresh tasting appetizer the other day and they didn’t last long at all.  The only thing I regret was forgetting about the fresh basil and arugula I had in the fridge, we were so excited to eat these that I completely forgot about them and by the time I remembered the sliders were all gone.  Oh well, they were still really tasty with some sprinkled dried basil and drizzled balsamic reduction.
My husband was actually the brains behind the creation of this appetizer, we were thinking about making regular caprese chicken and ended up with this fun idea instead, I love that my husband loves good food.  :)  Can someone just take me to Italy?  I would be perfectly content surviving on Italian food alone.  Maybe someday, in the meantime, I’ll just have to enjoy these yummy sliders.

Caprese Chicken Sliders

Caprese Chicken Sliders

Ingredients

  • 1 sourdough baguette, sliced
  • 3 to 4 roma tomatoes
  • sliced mozzarella cheese
  • fresh basil or arugula
  • dried basil, to taste
  • balsamic reduction, to taste
  • For the Chicken:
  • 2 to 3 chicken breasts
  • 1 packet Good Seasons dry italian dressing mix
  • 1/4 c. olive oil
  • 1/2 c. balsamic

Instructions

  • Cut each chicken breast into four or five pieces, then pound each piece flat and place into a large plastic bag. Mix together the dry italian seasoning, olive oil, and balsamic and pour over the chicken in the bag. Seal and shake the bag around so the liquid is well distributed then marinate in the fridge for at least an hour before serving- the longer the better!
  • Remove chicken from bag and discard the marinade. Grill over medium heat, after the first side is cooked, top each piece of chicken with a slice of tomato, some basil, and a slice of mozzarella cheese.
  • When chicken is fully cooked, carefully remove each piece and place on a slice of sourdough baguette bread. Sprinkle with dried basil and drizzle with balsamic reduction.

This recipe came from the Williams Family wayyyyyy back when our blog began. Since then I have made it dozens of times! They are super easy!

This recipe includes an actual recipe for meatballs if you want to make your own.. but the last few times I have made these I have bought the turkey meatballs at Costco and used those! I have also used the Italian meatballs from Costco and those taste great too (I just feel less guilty eating the turkey meatballs and my kids don’t even know the difference)! I just dump in the meatballs with the sauce (and veggies and pineapple) and dinner is DONE. It is one of those great fix-it and forget-it crock pot meals. Sometimes I like to saute the peppers to soften them up before adding them in, but you don’t have to– it just depends on whatever your family likes! Also, I doubled the sauce recipe on this because my family loves to eat the sauce over rice.. if you aren’t a big sauce fan, feel free to half the sauce part.

Waikiki Meatballs

Waikiki Meatballs

Ingredients

    For the Meatballs:
  • 1 1/2 lbs. ground beef
  • 2/3 cup cracker crumbs
  • (1/2 red bell pepper, finely chopped)
  • (1-2 tsp. red pepper flakes)
  • 2/3 cup chopped onion
  • 1/4 cup milk
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 egg
  • 2 tsp. ginger
  • For the Rest...
  • 4 Tbs. Cornstarch
  • 1 cup brown sugar
  • 1/3 cup soy sauce
  • 1/4 white vinegar
  • 1/3 cup ketchup
  • 1 green pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can pineapple tidbits, divided into juice and tidbits

Instructions

  • Mix meatball ingredients together and roll into meatballs. Brown and cook over medium heat in large skillet until cooked through (Or you can roll them and bake them in the oven at 425 for 13-14 minutes).
  • In a small mixing bowl, mix cornstarch and brown sugar. Drain pineapple juice into brown sugar mixture with soy sauce, vinegar, and ketchup.
  • Add meatballs, peppers, and pineapple tidbits to crock pot and pour sauce over.
  • Cook on low for 2-4 hours or until sauce is thickened. Serve over rice.

Nowadays there are quite a few Cafe Rio Copycat Recipes floating around out there but we are proud to be the home of the ORIGINAL Copycat Cafe Rio Recipes (… If there is such a thing as an “original” copycat.. I guess that’s kind of an oxymoron)! When I first posted the sweet pork recipe back in 2007 I couldn’t find a copycat recipe anywhere (at least one that looked somewhat accurate) so I created my own. Eventually we started coming up with more and more recipes until we got ourselves quite the collection. Our first exposure to Tri-Tip was while we were living in the bay area, it seemed like a favorite around there.  We were in love with a little restaurant in Walnut Creek called the Buckhorn Grill.  They made the most amazing BBQ Tri-Tip sandwiches and salads, but it is also great on its own with a side of salad and potatoes.  What makes this BBQ Tri-Tip recipe especially delicious is the homemade bbq sauce.  It is my favorite bbq sauce in the world, it is tangy and a little sweet and has just enough of a little spicy kick to make it amazing!

BBQ Tri Tip with a Tangy Homemade BBQ Sauce

BBQ Tri Tip with a Tangy Homemade BBQ Sauce

Ingredients

  • tri-tip roast (about 2 pounds)
  • 2 Tbsp. olive oil
  • Rub Ingredients
  • 1/2 tsp. kosher salt
  • 1/2 tsp. celery salt
  • 1/4 tsp. pepper
  • 1/4 tsp. granulated garlic
  • For The Homemade BBQ Sauce:
  • 1 Tbsp. Vegetable oil
  • 1 tsp. minced garlic
  • ¾ c. ketchup
  • ½ c. cider vinegar
  • ¼ firmly packed brown sugar
  • 3 Tbsp. Worcetershire sauce
  • 1 ½ Tbsp. Yellow mustard
  • 2 tsp soy sauce
  • ½ tsp chili powder
  • Tabasco sauce (to taste)

Instructions

  • Let the tri-tip sit out at room temperature at least 20 minutes before grilling. Then mix together the rub ingredients in a small bowl. First rub the meat in the olive oil then rub all over with the spices. Grill over medium heat, we like to do 10 minutes on each side of direct heat, then another 30 minutes of indirect heat.
  • When there is about 15 minutes left, baste the tri-tip with half of the bbq sauce- recipe below.
  • Let the meat sit for at least 5 minutes after removing from the grill before cutting into it. Cut into thin slices and serve with the remaining bbq sauce for dipping.
  • For The Homemade BBQ Sauce:
  • In a medium saucepan over medium-high heat, warm the vegetable oil. Add the garlic and cook for 1 minute or until the garlic turns golden. Add the remaining sauce ingredients, including Tabasco sauce to taste, and bring to a boil. Reduce heat and simmer about 15 minutes. Divide the sauce in half (you will use half to baste the tri-tip and the other half for dipping).
