The good stuff makes all the difference in the world. there is a place in SLC called Millcreek oil and vinegar. You can just go taste the olive oils and vinegar. I never knew there were so many different kinds. I would highly recommend it if you are in the area. I know what I'm having for lunch tomorrow. And I totally agree with you about the balsamic. I bought a delicious bottle at the cafe inside Tai Pan after debating the price and I am so glad I did. It doesn't even compare to the cheap stuff. Sourdough bread is the only way we ever make grilled cheese as well.
