  1. Box mix – This recipe starts with a simple Belgian waffle box mix. We like to use the Krusteaz brand. You can also make your own Belgian waffle mix from scratch if you prefer.
  2. Combine – Pour the mix into a large mixing bowl. In a separate bowl lightly beat two eggs, then pour them in with the waffle mix. Add oil, water, pumpkin puree, cinnamon, nutmeg, and brown sugar. Using a whisk, mix until combined.

    This recipe is sooooo good, thank you! I customized by adding a tablespoon or two of ground flax seed and a little extra liquid. The spice level is perfect for us. My toddlers devoured them, and my own waffles didn’t even make it to the plate as I made more for the rest of my family, lol.

    These were really good! I love pumpkin everything so needless to say I added a little more spice. In addition to your measurements of spices I added a teaspoon of pumpkin pie spice. I also made a compote of fresh apples, cinnamon and a touch of sugar to pour over top. A little fresh maple syrup on the side was a perfect dipping experience to not overwhelm the flavors.

    1. I’m sorry, I’m not familiar with the Carbon’s Malted Original Mix. If it is a Belgian waffle mix you can use it in place of the Krusteaz mix in the recipe with the same amount of pumpkin puree and spices.

    Are you sure this isn’t a muffin recipe? I had to more than double the water (closer to the ratio of the Kristen recipe). Also I’d recommend mixing the fluid ingredients and the dry separately then adding together so as not to over mix the batter. Otherwise, very easy and yummy recipe. Thanks for sharing.
