I can honestly say that growing up, my #1 favorite food was corn. I thought everything tasted better when corn was added to it. My parents knew that corn was my very favorite food so whenever they introduced me to a new food they said “come on, try it.. it tastes like corn!” True story. I actually liked squash, rice, brussel sprouts, carrots, and broccoli because my parents told me they tasted like corn and in my little child mind– they really did taste like corn. It took me until I was serving my 2-year-old squash and telling her “it tastes like corn”… that I realized it really doesn’t taste anything like corn (except for the salt and butter). Whether it was cruel or genius.. it got me to eat vegetables I wouldn’t have otherwise eaten.
ANYWAY…. my point of all this is that I loved corn as a kid and I still love it to this day. If a recipe calls for corn.. I usually double the corn part. So get out there to your local farmer’s market or corn stand and get some corn to make these awesome corn recipes! You won’t be sorry. Oh, and be sure to load up.. even if you can’t eat it all right away.
