This lasagna soup recipe is warm and hearty, full of tender noodles, savory beef and sausage meatballs, spices, and a tangy cheese topping that melts in to create a creamy soup. Rich tomato broth and canned tomatoes make the perfect combination for fresh tomato flavor. Serve with a simple salad and some crusty bread.

Ingredients for Delicious Lasagna Soup

Don’t let this ingredient list scare you! It is so easy to make and this stove top soup is well worth the extra seasonings and flavor. Make this soup on a cold night for a comforting soup dinner!

  • Olive oil – Cooking the oil in a pan to help add flavor to the soup.
  • Onion – Finely chop the yellow onion. If you have kids or family members that don’t love onion, then you can use less or omit the onion.
  • Garlic cloves – Crush or chop up the fresh garlic.
  • Italian sausage – Buy this sausage ground up. You will cook this on medium-high heat with the onion and garlic.
  • Oregano – This has a strong earthy flavor that is common is most Italian dishes.
  • Red pepper flakes – Add a little heat to the soup. Again, if you have kids or adults who are not fans of heat, then leave this ingredient out or lessen it.
  • Tomato paste – Thicken the soup with tomato paste. This is not marinara sauce or tomato sauce.
  • Tomatoes – We prefer to use famous Pomodoro San Marzano dell’Agro Sarnese – Nocerino DOP canned tomatoes. But you can use your favorite brand of canned or crushed tomatoes.
  • Chicken broth or Beef broth – The liquid that will add flavor but also give the soup more substance.
  • Bay leaves – Always a favorite to throw in on top! Make sure to remove the bay leaves before serving the soup.
  • Pasta – You can use either fusilli or rotini pasta. Both lock in and hold onto the flavor of the broth and cheese, as well as hold their shape nicely. You can also use lasagna noodles, cut into bite-size pieces.
  • Basil – Fresh basil is full of sweet and savory flavor!
  • Cheese – Mozzarella cheese, ricotta, and parmesan are three cheeses that blend together making this cheesy deliciousness! Add an extra dollop of ricotta as a garnish when serving.

Suggestions and Variations for Easy Lasagna Soup

In addition to using Pomodoro San Marzano dell’Agro Sarnese-Nocerino DOP from Europe, try these tips for the best Lasagna soup:

  • Protein – We like to use a half and half mixture of spicy sausage, ground pork, and ground beef for this soup. You can mold the mixture into meatballs and fry them up to add to the soup, or just brown the meat and mix it into the soup.
  • Other meat – you can use ground turkey or lean ground beef in this easy lasagna soup recipe.
  • Faster – To speed up the cooking process, you can cook the noodles separately in another pot and add them to the soup.
  • Seasoning – You can substitute Italian seasoning for the oregano and basil if you don’t have any fresh herbs on hand. Add fresh parsley or a some kosher salt and little black pepper to taste.
  • Add-ins – Fresh spinach always adds fresh taste but also a beautiful color to the lasagna soup. Zucchini, carrots, bell peppers, red bell pepper or any other veggie you love will add to the soup base.
  • Toppings – Add a dollop of ricotta cheese to the top, or shred fresh parmesan. You can also try adding a dash of heavy cream or a little bit of cream cheese just before serving to thicken and give the soup a creamy texture.
  • Serving the soup – My kids like to serve themselves and add the cheese mixture and watch it melt into their bowl of soup. I serve the cheese mixture separately on the table so guests can add the amount they would like.

Other Methods of Cooking Lasagna Soup

Take advantage of cooking this soup three ways! Stove top, instant pot, or crockpot are all great ways to make the best lasagna soup. Each cooking appliance does vary in time, but all come out with the same great results!

  • When cooking on the stovetop, make sure to use a large pot to accommodate all the delicious ingredients. Simmer on medium heat. Cook the meat in a large skillet until browned, drain the excess grease, then add the rest of the ingredients.
  • Instant pot lasagna soup – Place the soup setting on and cook on high pressure for 30 minutes. The soup button will simmer the soup. Then, add the pasta and cheese at the end.
  • Crock-pot lasagna soup – Place all the ingredients for the slow cooker lasagna soup in the slow cooker EXCEPT for cheese and the pasta. Then, cook on high for 3-4 hours or on low for 6-8 hours hours. Once ready to serve, add in cooked pasta and serve with cheese on the side.

Storing Cheesy Lasagna Soup

Store lasagna soup in an airtight container and stick in the fridge for five to seven days. You can even freeze this soup. Either way your have leftovers to enjoy another day!

Freezing – This soup will freeze nicely WITHOUT the pasta or cheese mixed in. I sometimes make a double batch, then freeze half in a freezer safe container. Then, to thaw, just add it to a saucepan or dutch oven and reheat. Stir with a wooden spoon occasionally. Then, I’ll cook extra noodles and add them and the cheese to the soup.

  • Sauté onions and fresh garlic in olive oil in a skillet. Add sausage/ground beef mix and brown.

  • In a stock pot, combine oregano, red pepper flakes, tomato paste, diced tomatoes, chicken broth and bay leaves. Don’t add the pasta and basil yet.

  • Drain any excess fat drippings from the meat and add the meat to the soup. Bring the soup to a boil and then simmer for at least an hour, then add the pasta about 15-20 minutes before serving. When the pasta is done add the basil.

  • Mix the cheeses, salt, and pepper together in a small serving bowl.

  • When the soup is served in individual bowls, add a large scoop of ricotta (at least 2 tablespoons) into each bowl. Serve immediately.

    So surprising what a difference a certain type of tomato makes! This soup is so good! The tomatoes are so rich & flavorful – not sour or acidic or overly sweet, as sometimes happens. They flavor the broth of the soup so wonderfully! Love the soup, it’s got a nice heartiness to it!

  3. If you are subbing the Italian seasoning for the oregano and basil, how much Italian seasoning should you use? Thank you!

    1. I would just use 2-3 tablespoons or so. If you can add more basil, that would be best, especially if it is fresh. Hope this helps!
