One Pot Thai Pasta Ingredients

Using a long pasta helps soak up the peanut sauce when enjoying this delicious dish! Chop fresh vegetables, add herbs, and all the sweet and savory liquids to this easy Thai pasta recipe. Only one pot makes this recipe an amazingly delicious dinner!

  • Linguine – Cook the noodles according to the package directions. Make sure to drain the linguine before adding the rest of the ingredients.
  • Vegetables – Chop, slice, and cut the fresh carrot, bell peppers, and onions before adding them to the pot.
  • Herbs – Ginger root sliced and cloves of garlic minced together for that raw flavor.
  • Salted peanuts – Find roasted salted peanuts at the grocery store. You can find them chopped too. If you need to chop them, use a food processor.
  • Chicken broth – Gives the pasta flavor and liquid to cook in.
  • Coconut milk – Adds the creaminess to the noodles sauce.
  • Peanut butter – Has a sweet, salty, and nutty flavor that blends well and will melt in with the other liquids.
  • Brown sugar – Needed to balance and add sweetness!
  • Soy sauce and fish sauce – These both have a robust flavor that adds to the Thai authenticity of this dish.
  • Red pepper flakes – Make this pasta a bit spicy.
  • Cooked shrimp – Pealed and tail on the shrimp when buying. Shrimp need to be precooked before adding to the pot.
  • Cilantro leaves – These build aroma and will help give a boost of flavor.
  • Lime – Squeeze for an extra zest of garnish!

How to Make Easy Thia Peanut Pasta

This recipe is packed with veggies and the sauce is a perfect balance of spicy and sweet! Simply combine most of the ingredients together, stir over medium-high heat, then add in the remaining three ingredients at the end. It is an easy and quick one-pot meal that everyone loves!

  1. Combine – In a large stock pot, combine all the ingredients except cilantro, lime, and shrimp.
  2. Boil – Cover the pot and bring it to a boil. Reduce to low and simmer for 10 minutes, stirring frequently. When the pasta is cooked, remove the slices of ginger.
  3. Add in – Add shrimp, cilantro, and lime juice. Mix well and serve.
  4. Garnish – With peanuts, cilantro, lime juice, and/or sweet chili sauce.

Tips and Modifications for the Best Thai Pasta

This Thai peanut pasta dish is full of protein, nutrients, vegetables, and all the flavor from seasonings and fresh herbs. Most of these ingredients can be modified and still hold the flavor. Try these ideas for the best Thia peanut pasta recipe!

  • Noodles – Substitute the noodles for what is best for your family or what you already have in the pantry. Spaghetti noodles, fettuccine, or thin rice noodles are best. They soak up the sauce when twirling. Penne and rigatoni are not recommended.
  • Fish sauce – If you are worried about using fish sauce, don’t be! It adds a good flavor to the sauce but doesn’t taste fishy at all. If it really freaks you out, just use two tablespoons of soy sauce instead.
  • Spice – To add more spice, you can add a whole teaspoon of red pepper flakes, instead of half, or at the end add sriracha sauce over top.

“This was delicious, really loved how all the flavors came together! My husband and I both really enjoyed this dinner- easy to throw together when you need something quick and flavorful! This will definitely go to my favorites box. Thank you for sharing.”

Yes! We chose to add shrimp to this recipe, but you could also add chicken or do a vegetarian version (no shrimp, no fish sauce, and vegetable broth instead of chicken broth).
