Lasagna Roll Ups

Lasagna Roll Ups are everything you love about the classic dish, but rolled up into individual servings! Rich marinara sauce, cheese, and Italian sausage rolled into tender lasagna noodles.

Ingredients

MEAT SAUCE:

  • 1 lb italian sausage or ground beef
  • 1 onion chopped
  • 4 cloves garlic minced
  • 4 cup Spaghetti sauce you can use your favorite jarred spaghetti sauce or you can make your own

Instructions

  • In a large skillet cook sausage (or ground beef), onion and garlic until the beef is no longer pink. Drain any excess fat from the pan.

  • Add spaghetti sauce and simmer for about 15 minutes.

  • Spread half of the meat sauce on the bottom of a glass baking dish.

  • In a bowl combine cottage cheese, parmesan cheese, egg, parsley, onion powder, garlic powder, salt and pepper. Spread a little of the cheese mixture evenly over each lasagna noodle.

  • Roll up and place seam side down in rows in the baking dish.

  • Top with remaining sauce. Bake in the oven at 375 degrees for 30-35 minutes.

  • About 5 minutes before the dish is finished cooking remove from the oven and top with shredded mozzarella cheese. Return to oven and cook until cheese has melted.

RECIPE TIPS:

  • Freezing Instructions - One of the biggest reasons this is a go to dinner for me is how easy they are to make ahead of time and freeze! You can make a bunch of extra rolls, cover the casserole dish with foil, then just freeze them (without the sauce). Next time you make the roll ups, you can just thaw them and throw them in a pan with some sauce and they are ready to bake.
  • Storing Leftovers - Store any leftovers in the refrigerator, tightly covered, for up to three days.
  • Recipe Additions - For a little extra kick, toss in a pinch of red pepper flakes to the sauce. A little goes a long way, so be careful, especially with little eaters. You can also add some spinach to the roll ups for extra vitamins and nutrition. I promise your picky eaters will never even taste it!
