Basil and Sweet Pea Soup
This sweet pea soup was a personal favorite of mine growing up. It's simple, savory with a little sweet, and delicious.

- 1/4 cup butter not margarine
- 1/4 cup flour
- 3 cups milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon finely chopped fresh basil or 1 teaspoon dried basil
- 14 ounce can sweet peas drained
In a saucepan or soup pot over medium-low heat, melt the butter then stir in the flour.
Gradually whisk in the 3 cups of milk.
Bring heat to medium and continue to stir until the mix begins to bubble, boil, and thicken.
Add salt, pepper, basil, and sweet peas (drained) and cook another minute or two.
- On top of each soup, garnish with a sprinkle of fresh basil leaves.
- Enjoy your soup! This recipe is about as easy as it gets-- no blender or batches here! Truly a one pot soup.
