Basil and Sweet Pea Soup

This sweet pea soup was a personal favorite of mine growing up. It's simple, savory with a little sweet, and delicious.

Ingredients

  • 1/4 cup butter not margarine
  • 1/4 cup flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon finely chopped fresh basil or 1 teaspoon dried basil
  • 14 ounce can sweet peas drained

Instructions

  • In a saucepan or soup pot over medium-low heat, melt the butter then stir in the flour.
  • Gradually whisk in the 3 cups of milk.
  • Bring heat to medium and continue to stir until the mix begins to bubble, boil, and thicken.
  • Add salt, pepper, basil, and sweet peas (drained) and cook another minute or two.

Notes

  • On top of each soup, garnish with a sprinkle of fresh basil leaves.
  • Enjoy your soup! This recipe is about as easy as it gets-- no blender or batches here! Truly a one pot soup.
