Peanut Butter Bon Bons

Mix graham cracker, powdered sugar and coconut together.
Add butter, vanilla, and peanut butter and stir until completely combined. Roll or press mixture into 1-inch balls. Chill in the fridge for 30 minutes.
Melt chocolate in the microwave or in a double boiler. Dip each peanut butter ball in chocolate, either halfway or fully. Shake off any excess chocolate. Place on a prepared baking sheet or cookie sheet.
Enjoy once chocolate is fully hardened.

- Store leftovers in an airtight container on the counter at room temperature or in the refrigerator. You can even freeze them. Place them on a baking sheet covered with wax paper or parchment paper and freeze for 1 hour. Then transfer to an airtight container and store in the freezer.
