In a small bowl, mix crushed cookies and melted butter. Stir until combined.
Press the crust into the bottom of a 9-inch pie plate.
Fill with ice cream. Cover and freeze for at least 3 hours before serving.
Salted Caramel Topping
Heat the sugar in a saucepan over medium heat, stirring constantly and scraping the bottom, until the sugar has melted into an amber liquid, about 5 minuites.
Once the sugar has melted, add the butter. Once the butter is melted, add the cream. Boil for 1 minute. Remove from heat and stir in sea salt.
Whipped Cream
Using an electric mixer, beat cream, and powdered sugar until they form stiff peaks.
Remove the pie from the freezer. Drizzle caramel topping over each slice and add whipped cream.
