  • Add shrimp, 1 Tablespoon of fajita seasoning, chicken broth, green chiles, garlic, and lime juice to a ziplock bag or airtight container. Toss to combine. Let marinate for at least 1 hour.

  • While shrimp is marinating, thinly slice peppers and onions.

  • Heat a large skillet over medium-high heat. Drain marinade off the shrimp and place the shrimp in the skillet. Cook until just pink.

  • Add peppers and onions and cook until the veggies soften. Stirring often.

  • Serve on flour tortillas with your favorite toppings.

Notes

  • Nutrition facts do not include tortillas or toppings.
  • To make sheet pan shrimp fajitas, place marinated shrimp and sliced veggies on a baking sheet and bake at 450 for 8 minutes. Then broil for an additional 2 minutes.
  • Not a shrimp fan? Replace the shrimp with a pound of thinly sliced chicken or steak. 
  • Homemade Fajita Seasoning:
    • 2 tsp chili powder
    • 1 tsp paprika
    • 1 tsp oregano
    • 1 tsp cumin
    • 1 tsp salt
    • 1 tsp sugar
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/4 tsp cayenne pepper
