  • Thinly slice the onions.

  • Melt butter in a large heavy-bottomed pot over medium heat. Add onions and stir until they wilt down significantly. Adjust the heat to medium-low and cook until the onions turn a deep golden brown and become very soft and jammy. This can take anywhere between 45 minutes to an hour. Be patient! Then stir in balsamic vinegar and remove from heat.

  • Let onions cool a little while you mix the rest of the ingredients together. Add the onions and stir.

  • Garnish with sliced green onions (optional) and serve with chips!

Notes
