Ingredients

Chicken Marinade

Cucumber Yogurt Dip

Instructions

  • Blend all the chicken marinade ingredients in a food processor or blender.
  • Cut the chicken breasts into 4 to 5 long strips. Place strips into a large bowl, stir in the marinade, and refrigerate for at least 30 minutes.
  • Combine all the yogurt dip ingredients in a medium size bowl and refrigerate.
  • Thread the chicken onto the wooden skewers (remember to soak them at least 20 minutes) and grill over medium heat until cooked through (165-degrees F internal temperature)
  • Serve chicken with a side of yogurt sauce for dipping.

Notes

  • Don't forget to soak the skewers for at least 2o minutes if using wooden skewers
  • Try dipping the grilled chicken in peanut sauce or hot honey
  • Serve with cooked Jasmine rice or basmati rice
  • Store leftovers in an airtight container for up to 4 days. For best results, don't reheat in the microwave. Heat in a non-stick skillet over medium heat with a splash of water. Cover and allow to be heated through.
