Instructions

  • Make up the Fresh Mango Avocado Salsa (see below) and set aside.

  • Fry some corn tortillas in oil until a little crispy, then set on a paper towel and lightly salt.

Fresh Mango Avocado Salsa

  • Dice the mango and avocados into small cubes.

  • Put the diced mango and avocado in a bowl, then squeeze on the fresh lime juice and sprinkle with the chopped cilantro. Stir everything together, and refrigerate until tacos are ready.

Notes

Recipe Tips:

  • When picking a mango, look for one that is slightly soft but not mushy. You can determine this by gently squeezing the fruit. It should be plump and round.
  • If you get a flat mango there is a good chance it's going to be stringy.
  • To be certain the mango is ripe, smell it near the stem and choose one that smells sweet.
