For Peach Syrup
- 4-5 peaches
- 2 cups water
- 1/2 cup sugar divided
For Peach Lemonade
- 5 lemons
- 4 cups cold water or to taste
- ice
- mint leaves for garnish
Peel peaches, remove pits, and slice. Add to a large saucepan with 2 cups of water and 1/2 cup of sugar. Bring to a boil over medium-high heat.
Boil for about 5-6 minutes. Mash peaches with a potato masher for about a minute. While the peaches are cooking, juice the lemons.
Place a sieve over a bowl and pour peach mixture into the sieve a little at a time, allowing the juices to drain into the bowl. Use a large spoon to help mash the juices through. Once you have gotten all the juice through, discard the remaining peach pulp.
In a large pitcher, stir together peach syrup, lemon juice, the remaining 1/2 cup of sugar (plus more, to taste), water, and ice. Serve with lemon slices, peach slices, and mint leaves for garnish.
