Fresh Strawberry Pie

Fresh Strawberry Pie is the perfect summer dessert when strawberries are in season. The tart berries, sweet filling, and flakey, buttery crust are a match made in heaven!

Instructions

  • Take 1 cup of the strawberries and lightly crush them. Add them to a pot with the water and bring to a boil.
  • Boil for 3 minutes and then remove the berries. Leave the juice in the pot. Whisk in sugar, cornstarch, and salt. Simmer over medium high heat until the mixture thickens.
  • Remove from heat cool in the fridge until glaze is thickened, about two hours.
  • Add the rest of the sliced berries to a large bowl. Pour the cooled glaze over the top and mix until all the berries are coated. Pour the filling into the pie crust.
  • Refrigerate until the filling is set, about two hours.
  • Top with whipped cream or ice cream and serve.

  • Find fresh ripe strawberries with a rich red color.
  • For the best tasting pie start with our homemade pie crust.
  • For a little added sweetness, sprinkle a little sugar on the outer edge of the pie crust before cooking.
