Boba Smoothie

- 1 cup tapioca pearls
- 6 cups water
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 4 cups frozen honeydew
- 2 cups coconut milk You may need to add more depending on the strength of your blender and the size of your honeydew pieces.
- 2 tablespoons sugar
Bring 6 cups of water to a boil. Add tapioca pearls and stir until all the pearls float to the top. Turn down the heat and cook for 20 minutes, stirring every 2-3 minutes. Remove the pot from the heat and cover. Let the pearls sit, covered, for 25 minutes. Do not open the lid.
Pour the pearls into a strainer and rinse with cold water until the pearls are cool to the touch.
Place pearls in a bowl and add brown sugar and honey. Stir to combine.
Blend the honeydew, coconut milk, and sugar in a blender until smooth.
Evenly distribute the sweet boba mixture between 4 glasses. Pour smoothie over the top.
