Boba Smoothie

This refreshing Boba Smoothie combines frozen fruit, creamy coconut milk, and chewy tapioca pearls. Try this trendy drink out for yourself!

Ingredients

  • 1 cup tapioca pearls
  • 6 cups water
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 4 cups frozen honeydew
  • 2 cups coconut milk You may need to add more depending on the strength of your blender and the size of your honeydew pieces.
  • 2 tablespoons sugar

Instructions

  • Bring 6 cups of water to a boil. Add tapioca pearls and stir until all the pearls float to the top. Turn down the heat and cook for 20 minutes, stirring every 2-3 minutes. Remove the pot from the heat and cover. Let the pearls sit, covered, for 25 minutes. Do not open the lid.

  • Pour the pearls into a strainer and rinse with cold water until the pearls are cool to the touch.

  • Place pearls in a bowl and add brown sugar and honey. Stir to combine.

  • Blend the honeydew, coconut milk, and sugar in a blender until smooth.

  • Evenly distribute the sweet boba mixture between 4 glasses. Pour smoothie over the top.
