Breakfast Tacos Recipe
These Tex-Mex style breakfast tacos are filled with sausage, bacon, and eggs and are perfect for breakfast, brunch, or even dinner!

Cook sausage links in large non-stick skillet over medium heat until cooked through (or follow package directions). Set aside on a paper towel.
Cut bacon into smaller pieces and place back in the large skillet over medium high heat. Cook until the bacon grease is released into the pan. Drain off the excess grease, but leave a tiny bit in the pan to sauté the vegetables.Add chopped red bell pepper and chopped onion. Cook with the bacon until onions become soft and transparent and bacon becomes slightly crispy. Cut sausage into smaller pieces and add back to the pan.
Crack eggs into a medium bowl and beat with a fork until smooth. Move the sausage mixture to one side of the pan pour the egg mixture into the other side to scramble. When the eggs are scrambled, gently stir the into the sausage mixture until combined.
Season with salt and pepper to taste if needed (the bacon may make the eggs salty enough). Remove from heat and assemble tacos. Serve over warm tortillas and top with your favorite toppings and sauces (see ideas above)
