Ingredients

smoked chicken sausage
chopped into rounds

large sweet potato
peeled and chopped into 1-inch pieces

head
broccoli
chopped
1
red bell pepper
deseeded and chopped

red onion
chopped

olive oil

tablespoon
Italian seasoning

onion powder

teaspoon
garlic powder

Instructions
Preheat oven to 425. Add the chicken sausage and all of the chopped vegetables into a large bowl.
Add olive oil and spices. Mix until everything is evenly coated.
Place everything onto a single layer on a large baking sheet.
Bake for 25 minutes. Then, broil for another 2-5 minutes to crisp up the edges.
Serve over brown rice, or on its own.
