Starbucks Egg Bites

  • Heat oven to 350 degrees F. Spray an 18-count muffin pan generously with nonstick cooking spray, or use muffin liners. Set aside.

  • Place eggs and cottage cheese in a blender and blend until smooth. Pour into a bowl and fold in cheese, salt, pepper, and paprika.

  • Fill each muffin cup about two-thirds full (just under ¼ cup egg mixture). Top each egg bite with a rounded teaspoon of bacon. Gently press bacon into the egg mixture.

  • Bake 20-22 minutes, or until eggs are set. Remove and let sit for 5 minutes.

Notes

If you're not using muffin liners, I find it easiest to remove the egg bites from the tin using a plastic spoon.
