Ingredients

Salad

  • 6 cups chopped romaine lettuce
  • 2 cups baby arugula
  • 2 cups sliced grilled chicken
  • small red onion, thinly sliced
  • 1 cup pecan halves
  • 1 ¾ cup dehydrated apple slices (crispy, not soft)
  • ¾ cup crumbled Gorgonzola cheese
  • 2 Roma tomatoes

Dressing

Instructions

  • Place salad dressing ingredients in a blender. Blend for 30 seconds.

  • Pour into a glass jar and refrigerate for at least 30 minutes.

  • Assemble all salad ingredients in a large bowl.

  • Pour dressing over the salad and toss or serve on the side.

Notes

  • Make the dressing up to 3 days ahead of time for a quick lunch.
  • To take the edge off the taste of the red onions, soak them in cold water for 10 minutes. 
  • Salad's don't keep well in the fridge, so try to eat leftovers by the next day.
