Panera’s Fuji Apple Chicken Salad is a classic salad I love getting. The apple chips are crisp and sweet, the vinaigrette is tangy and refreshing, and the slices of the chicken breasts give so much protein. Try making this delicious salad yourself!

Ingredients in Panera Bread Fuji Apple Salad

  • Romaine Lettuce
  • Baby Arugula
  • Red Onion
  • Pecans
  • Sliced Dehydrated Apples
  • Gorgonzola Cheese
  • Roma Tomatoes
  • Optional: Sliced Grilled Chicken
  • Dressing: Olive Oil, White Wine Vinegar, Honey, Apple Juice, Salt, Onion Powder, Garlic Powder

Variations

  • Rotisserie chicken- slice up a chicken from the grocery store for a different taste, and to make your life a little easier.
  • Tofu- make it vegan by omitting the cheese and adding grilled or pan-fried tofu.
  • Cheese- try blue cheese or feta cheese for a different taste.
  • Chickpeas- add chickpeas for more protein and fiber.

  • Salads look so nice in a big bowl! Try plating your Fuji Apple Salad up in a big beautiful bowl. It also makes it easier to mix in the dressing, and more fun to eat.
  • One of my favorite things to do at Panera with this salad is to crush the bag of chips it comes with and sprinkle them over the salad. You can achieve this with a handful of salted kettle cooked chips, crushed and tossed over the salad. You’d be surprised what a delicious flavor they add.

Ingredients

Salad

  • 6 cups chopped romaine lettuce
  • 2 cups baby arugula
  • 2 cups sliced grilled chicken
  • small red onion, thinly sliced
  • 1 cup pecan halves
  • 1 ¾ cup dehydrated apple slices (crispy, not soft)
  • ¾ cup crumbled Gorgonzola cheese
  • 2 Roma tomatoes

Dressing

Instructions

  • Place salad dressing ingredients in a blender. Blend for 30 seconds.

  • Pour into a glass jar and refrigerate for at least 30 minutes.

  • Assemble all salad ingredients in a large bowl.

Notes

  • Make the dressing up to 3 days ahead of time for a quick lunch.
  • To take the edge off the taste of the red onions, soak them in cold water for 10 minutes. 
  • Salad’s don’t keep well in the fridge, so try to eat leftovers by the next day.
