Preheat oven to 425. Slice the potatoes in half. If there are some larger potatoes in the batch, you might have to cut them into quarters. Try to make all the potato pieces similar sizes. Place in a large bowl with avocado oil, pepper, and salt. Toss to combine.
Place a piece of parchment paper on a baking sheet. Place the potatoes cut side down on the parchment paper. Sprinkle with dried thyme.
Bake for 30 minutes, flipping halfway through. Broil the potatoes on high for a few minutes at the end for extra crispiness. Potatoes should be fork tender with a crispy outside and creamy inside.
Serve immediately.
