This Roasted Baby Potatoes recipe makes the perfect side dish. You can serve it with any protein entree like chicken, pork, steak, or salmon. Add on a salad or steamed vegetables like broccoli or cauliflower and you have a delicious and nutritious meal for the whole family. My kids also love dipping these potatoes in ranch or ketchup.

Ingredients in Roasted Baby Potatoes

  • Golden Baby Potatoes – you can also use fingerling potatoes or small Yukon Gold potatoes
  • Avocado Oil – or another oil with a high smoke point like peanut oil, sunflower oil, or canola oil. Extra-virgin olive oil has too low of a smoke point for this recipe.
  • Kosher Salt and Black Pepper
  • Dried Thyme – see below for other seasoning ideas, but we love dried thyme!

Seasoning Ideas

Most nights, we keep it simple with salt, pepper, and dried thyme. However, these roasted baby potatoes work so great with so many herbs and spices! Try some of our favorites below, or let us know your favorites in the comments.

  • Minced Garlic Cloves or Garlic Powder
  • Onion Powder
  • Dried or Fresh Rosemary
  • Dried Parsley
  • Paprika
  • Italian Seasoning
  • Cajun Seasoning
  • Ranch Seasoning

Recipe Tip

Place the potatoes cut side down on the parchment paper at first, then flip them halfway through cooking. The potatoes should flip easily with a metal or very thin spatula.

Frequently Asked Questions About Roasted Baby Potatoes

Should I soak potatoes in water before cooking?

You can add this extra step if you want your roasted baby potatoes even crispier. Soak potatoes in cold water for at least an hour. This removes excess starch that keeps potatoes from crisping up.

What’s the difference between roasting and baking potatoes?

Baked potatoes usually refers to a whole potato cooked in the oven. Roasted potatoes are usually cut into smaller pieces, seasoned, and cooked at a higher temperature.

Are red or gold potatoes better for roasting?

Gold potatoes are better than red for roasting because gold potatoes have more starch and less moisture. Red potatoes are better for boiling.
