Ingredients

  • 8 ounces bacon (do not use thick cut)
  • 16 Medjool dates
  • 4 ounces goat cheese or blue cheese
  • 2 tablespoons honey optional
  • kosher salt and pepper to taste

Instructions

  • Pit the Medjool dates by slicing lengthwise down the center without cutting all the way in half. The pit will easily come out.
Cutting into a date with a small knife next to a bowl of dates.
  • Stuff a small amount of goat cheese or blue cheese into center of date and close.

  • Roll each date with a piece of bacon and pierce with a toothpick to secure. The bacon should wrap about 1.5 times around the date, trim if it wraps more than that.

  • Place pan into cold oven and heat to 375℉. Bake for about 10 minutes, flip and bake for another 5 minutes, flip again and bake for another 5 minutes until bacon is golden brown and dates are not burned.

Notes

    • Be sure to use regular bacon and not the thick cut. It will not cook thoroughly if the bacon is thick.
    • Add a little cayenne pepper to the honey to add a little extra spice.
    • If serving at a party, keep the dates warm by placing them in a Crockpot on low heat (or on the "warm" setting).
    • Store leftovers refrigerated in an airtight container for 3-4 days.
