- 8 ounces bacon (do not use thick cut)
- 16 Medjool dates
- 4 ounces goat cheese or blue cheese
- 2 tablespoons honey optional
- kosher salt and pepper to taste
Pit the Medjool dates by slicing lengthwise down the center without cutting all the way in half. The pit will easily come out.
Stuff a small amount of goat cheese or blue cheese into center of date and close.
Cut the bacon slices into halves.
Roll each date with a piece of bacon and pierce with a toothpick to secure. The bacon should wrap about 1.5 times around the date, trim if it wraps more than that.
Line a baking sheet with aluminum foil. Place the wrapped date on the lined baking pan.
Place pan into cold oven and heat to 375℉. Bake for about 10 minutes, flip and bake for another 5 minutes, flip again and bake for another 5 minutes until bacon is golden brown and dates are not burned.
Brush honey onto dates then sprinkle with salt and pepper.
Serve while warm.
-
- Be sure to use regular bacon and not the thick cut. It will not cook thoroughly if the bacon is thick.
-
- Add a little cayenne pepper to the honey to add a little extra spice.
-
- If serving at a party, keep the dates warm by placing them in a Crockpot on low heat (or on the "warm" setting).
-
- Store leftovers refrigerated in an airtight container for 3-4 days.
