Chicken Divan

Make this easy Chicken Divan with tender chicken, broccoli, cheddar cheese, and a creamy sauce. A cozy family dinner that is simple and delicious.

Ingredients

  • 4 chicken breasts cut into 1-inch pieces
  • 2 10.5 ounce cans cream of chicken soup
  • 1 cup cheddar cheese shredded, plus more for topping if desired
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1/2 teaspoon curry powder
  • 1 head broccoli chopped into bite sized pieces
  • rice for serving

Instructions

  • Preheat oven to 350. Spray the bottom of a 9x13 pan with cooking spray. Add chicken pieces, then broccoli pieces.
    Casserole dish with diced chicken and small pieces of broccoli.
  • Mix all remaining ingredients in a large bowl.
    Glass mixing bowl with cream of chicken and cheese mixture. Spatula on the side.
  • Place spoonfuls of sauce all over the chicken and broccoli. Spread out with a spatula.

  • Bake for 30 minutes. If desired, add more shredded cheese on top for the last 5 minutes.

  • Serve over rice or mashed potatoes.

Notes

  • Rice is not included in the nutrition calculation.
  • Optional crunchy topping: mix 2 cups of crushed Ritz crackers (or corn flakes or panko breadcrumbs) with 1/2 cup of melted butter. Sprinkle over the top of the casserole before baking. 
  • You can add cooked rice to the casserole before baking if you want everything in one dish.
  • Store leftovers in an airtight container in the refrigerator.
  • Freeze before baking for an easy make-ahead meal.
  • Extra cheddar on top during the last 5 minutes makes it even better.
