Chopped Italian Sandwich Recipe

- 2 cups shredded lettuce
- 1 ounce pepperoni (about 6 slices)
- 1 ounce salami (about 6 slices)
- 4 ounces sliced ham (4-8 slices depending on thickness)
- 4-6 slices provolone cheese
- 1/4 cup sliced banana peppers
- 1/4 cup sliced pickles
- 1/4 cup chopped red onion
- 1/4 cup mayonnaise
- 2 tablespoons Submarine dressing (I like using the "Beano" brand, see suggestions below for substitutions)
- 1 tablespoon red wine vinegar
- Italian seasoning (to taste)
- salt and black pepper (to taste)
- 4 hoagie rolls or sub sandwich rolls
Spread chopped lettuce evenly over a cutting board.Note: I like to pre-chop my onion into fine dices to begin with because I like them extra tiny, but you can keep the onion in slices if you prefer and just chop them with everything else later. Lay meats evenly over the top of the bed of lettuce and onion.
Sprinkle banana peppers, pickles, and chopped onion over the top.
Lay cheese slices over everything.
Start to chop everything into small pieces by running a knife through all the ingredients vertically and then turning the cutting board and chopping again through the ingredients cross-wise. Keep chopping until you reach the size of dices you prefer.
Once everything is finely diced, add mayonnaise, submarine dressing, red wine vinegar, Italian seasoning, and some salt and pepper. Toss together to combine or continue to chop to incorporate all the ingredients.
Scoop a large spoonful of the mixture and stuff evenly into hoagie rolls and serve.
Substitute Submarine Dressing:
If you can't find the Beano Submarine Dressing you can easily make your own by whisking together 1 tablespoon olive oil, 1 tablespoon red wine vinegar, 1/4 teaspoon dijon mustard, 1/4 teaspoon Italian seasoning and a pinch of sugar. This should make the perfect amount to add to your sandwich.
