Christmas Cookie Bars

Make Christmas cookies the easy way! One bowl, no scooping, just bake these chewy, Christmas Cookie Bars loaded with holiday M&Ms and sprinkles.

Ingredients

  • 1 cup melted butter
  • 3/4 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup chocolate chips (divided)
  • 1 cup plain red and green M&Ms (divided, make sure they aren't the minty ones)
  • Christmas sprinkles (to taste)

Instructions

  • Preheat oven to 350°F.
    Line a 9×13-inch baking pan with parchment paper, leaving a little extra hanging over the sides so you can lift the bars out easily once they’ve cooled.

  • In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until the mixture is smooth and glossy. Add in the eggs and vanilla extract, stirring until everything is well blended.

  • Next, add the flour, baking soda, and baking powder, and mix just until no dry spots remain. Gently fold in ½ cup of chocolate chips and ½ cup of M&Ms.

  • Press the dough evenly into the prepared pan (using your hands or a spatula works best).

  • Sprinkle the remaining chocolate chips and M&Ms evenly over the top, then finish with a handful of Christmas sprinkles.

  • Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out with a few soft crumbs.

  • Let the bars cool completely in the pan before lifting them out and slicing into squares. (They’ll hold their shape best once cooled completely.)

Notes

Storage tips: Prepare the dough up to a day in advance, cover, and refrigerate. Let it sit at room temperature for 20-30 minutes before baking. Once cooled, store bars in an airtight container for up to 3-4 days. Add a slice of bread to keep them soft. They also freeze great! Wrap tightly or place in a freezer bag and freeze for up to 2 months.
