French Onion Rice

This easy French Onion Rice is a rich, savory side dish that complements any meat. Perfect for family dinners, holidays, and potlucks.

Ingredients

  • 2 cups white rice (see notes for brown rice option)
  • 2 10 ounce French onion soup condensed (Campbell's)
  • 1 1/2 cups water
  • 1/2 cup butter

Instructions

  • Preheat oven to 350°F.
  • Spread 2 cups of uncooked white rice evenly in the bottom of a 9x13 baking dish.
  • Pour 2 cans (2 1/2 cups) of condensed French onion soup over the rice.
  • Pour 1 1/2 cups of water over the rice and soup.
  • Cut a stick of butter (1/2 cup) into 8 slices. Place the butter slices evenly over the rice mixture.
  • Cover the dish with foil, sealing the edges tightly around the pan. Securing the edges will ensure the steam stays trapped in the pan to cook the rice evenly.
  • Bake for 1 hour and 15 minutes. Remove foil layer and fluff with a fork before serving.

Notes

Brown Rice Variation: Boil 2 cups of brown rice in 4 cups of water on the stove for 5 minutes. Drain the water from the brown rice. Add the brown rice to the bottom of the baking dish and follow the rest of the recipe.
