Equipment

  • blender or food processor

Ingredients

  • 1/2 head of cabbage
  • 4 Persian cucumbers
  • 5 green onions

For the Dressing

  • 2 cloves garlic
  • 1 shallot
  • juice of 2 lemons
  • 1/4 cup chives
  • 1/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1/4 cup walnuts
  • 10-12 basil leaves
  • 2 cups spinach
  • 1/3 cup nutritional yeast
  • salt and pepper
  • chips for serving

Instructions

  • Finely dice the cabbage, cucumbers, and green onion. Add to a large bowl.

  • In a blender or food processor, add the dressing ingredients.

  • Blend until smooth and pour over the cabbage mixture.

  • Stir together until everything is coated. Serve with tortilla chips or pita chips.
