- 1/2 head of cabbage
- 4 Persian cucumbers
- 5 green onions
For the Dressing
- 2 cloves garlic
- 1 shallot
- juice of 2 lemons
- 1/4 cup chives
- 1/4 cup olive oil
- 1 tablespoon rice vinegar
- 1/4 cup walnuts
- 10-12 basil leaves
- 2 cups spinach
- 1/3 cup nutritional yeast
- salt and pepper
- chips for serving
Finely dice the cabbage, cucumbers, and green onion. Add to a large bowl.
In a blender or food processor, add the dressing ingredients.
Blend until smooth and pour over the cabbage mixture.
Stir together until everything is coated. Serve with tortilla chips or pita chips.
