Homemade Huckleberry Jam

Huckleberry jam is perfectly sweet & tart. Huckleberries taste like a cross between a blueberry and blackberry, which makes for a tasty jam!

Ingredients

  • 1 quart huckleberries (4 cups)
  • 4 cups sugar
  • 4 tablespoons water
  • 1 (1.75 box) powdered fruit pectin (about 5 tablespoons)
  • 2 tablespoons lemon juice

Instructions

  • Rinse huckleberries and place in a heavy saucepan with water. Lightly mash, then bring to a boil and simmer 5 minutes. Stir in pectin and lemon juice and bring to a full rolling boil.

  • Add sugar all at once, stirring until dissolved. Return to a rolling boil and boil hard for 1–2 minutes, stirring constantly. Test on a chilled plate for set.

  • Skim foam, ladle hot jam into jars leaving ΒΌ-inch headspace, wipe rims, apply lids, and process in a boiling water bath for 10 minutes (adjust for altitude). Let cool 12–24 hours before storing. Makes 3 pints (or about 7 half-pints).
