Ingredients

  • 3.75 ounces instant pistachio pudding mix dry
  • 8 ounces crushed pineapple with juice
  • 1/4 cup pecans halves or chopped
  • 2 cups mini marshmallows
  • 2 1/2 cups cool Whip thawed
  • maraschino cherries optional, for topping

Instructions

  • In a large bowl, combine pudding mix, pineapple (with juice), pecans, and marshmallows. Stir well.
    Glass mixing bowl with crushed pineapple, pistachio pudding mix, marshmallows and chopped pecans.
  • Fold in Cool Whip until fully combined.
    Adding cool whip to bowl of pistachio salad mixture.
  • Cover and refrigerate for at least 2 hours or overnight.

  • Top with maraschino cherries and extra nuts before serving, if desired.
