- 1 bunch asparagus spears trimmed (about 20-40 spears depending on thickness of asparagus)
- 3 ounces prosciutto
- 8 ounces cream cheese softened
- 4 tablespoons green onion chopped
- 2 teaspoons minced garlic
Preheat oven to 450 degrees. Prepare a baking sheet pan by lining it with aluminum foil and spraying generously with cooking spray or drizzle with olive oil.
Blanch the asparagus by dropping it into boiling water for 2 minutes. Then, remove from the boiling water and place it in an ice bath.
Drain well and pat dry with a paper towel. Set aside.
Make the cream cheese mixture by mixing cream cheese, green onion, and minced garlic.
Spread cream cheese mixture over each prosciutto slice. (If the slices come on plastic dividers, leave the prosciutto slices on while spreading the cream cheese to make it easier.)
Cut the prosciutto in half with scissors and peel from plastic if on dividers.
Wrap 2-3 spears of asparagus in a slice of prosciutto with the cream cheese side touching the asparagus.
Place asparagus bundles in a single layer on the prepared baking sheet, then spray lightly with cooking spray.
Bake for 12-15 minutes until asparagus is tender.
- Do not add salt. Prosciutto provides plenty of salty flavor.
- Use thinly sliced prosciutto so it wraps easily around the asparagus.
- Bundle 2 to 3 thin asparagus spears together. Thick spears can be wrapped individually.
- Pat the blanched asparagus completely dry to prevent soggy bundles.
- Place the prosciutto seam underneath to keep it from unrolling.
- Begin checking thin asparagus after 10 to 12 minutes.
- Add lemon zest, black pepper, Parmesan, or red pepper flakes to the cream cheese for extra flavor.
- Assemble the bundles up to one day ahead and refrigerate them until ready to bake.
- Reheat leftovers in the oven or air fryer for the best texture.
