Raspberry Cordial
This non-alcoholic Raspberry Cordial is made with raspberries, sugar, fresh lemon juice, and water. Serve it cold over ice or add sparkling water for a fizzy treat inspired by Anne of Green Gables.

- 24 ounces raspberries fresh or frozen
- 1 1/4 cups sugar
- 3 lemons (1 for garnish)
- 4 cups water
- fresh raspberries for garnish
Combine the raspberries and sugar in a medium saucepan.
Cook over medium-high heat for about 20 minutes, stirring frequently, until the sugar has dissolved and the raspberries have broken down. Mash any remaining whole berries.
Pour the raspberry mixture through a fine mesh strainer into a large bowl or heat-safe pitcher. Strain it a second time if you want less pulp.
Juice two of the lemons and stir the lemon juice into the strained raspberry syrup.
While the raspberries cook, bring the water to a boil. Add the boiling water to the raspberry syrup and stir well. Cool slightly, then refrigerate for at least two hours or until completely chilled.
Slice the remaining lemon. Pour the cordial into glasses with ice and garnish with lemon slices and fresh raspberries.
- Fresh or frozen raspberries can be used. Frozen berries may need a few extra minutes to cook.
- Stir frequently while the raspberries cook so the sugar does not scorch.
- Strain once for a little raspberry pulp or twice for a smoother drink.
- Pressing the berries through the strainer extracts more juice but makes the cordial cloudier.
- For the best flavor, chill the cordial completely or refrigerate it overnight.
- Add cold water if the finished drink is sweeter than you prefer.
- For a sparkling drink, top individual glasses with sparkling water just before serving.
- Store covered in the refrigerator for up to five days.
- The leftover raspberry pulp can be served over yogurt, pancakes, oatmeal, or ice cream.
