Barbecue Chicken Pizza

Ingredients

  • 2 prepared pizza dough uncooked

Barbecue Pizza Sauce:

  • 1 tablespoon minced garlic
  • 2 teaspoons olive oil
  • 8 ounces tomato sauce
  • 6 ounces tomato paste
  • 1 tomato
  • 2 tablespoons fresh cilantro
  • 2 teaspoons basil
  • 2 teaspoons oregano
  • salt and pepper to taste
  • 1 cup BBQ sauce

Pizza Toppings

  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 8 ounces pineapple tidbits, drained (or 3/4 cup diced fresh pineapple)
  • 2 chicken breasts, grilled and sliced
  • 1/4 cup fresh cilantro

Instructions

Prepare the Sauce

  • Finely chop the fresh tomato, set aside. Sauté minced garlic in olive oil in the bottom of a saucepan. Add the fresh tomato and remaining ingredients to the pan, except the BBQ sauce. Simmer the sauce for 20 minutes.

  • Remove from heat and stir in BBQ sauce.

Make the Pizza

  • Roll the pizza dough onto two pizza pans or pizza stones.

  • Spread the sauce evenly over the pizza dough.

  • Top the pizzas evenly with cheeses and drained pineapple tidbits. Bake at 400° for 12-15 minutes.

  • Remove pizzas from oven. Add grilled chicken slices and sprinkle with chopped cilantro. Slice and serve.

Notes

*This recipe can easily be halved for 1 pizza.
