Chicken Gyro with Tzatziki Sauce

This Chicken Gyro recipe starts with tender chicken cooked on the grill or in the crock pot. Top it with your choice of tomatoes, lettuce, olives, red onions, Feta cheese, or a tangy Tzatziki sauce.

Ingredients

Grilling Method

  • 3/4 cup balsamic vinaigrette salad dressing
  • 3 tablespoon fresh squeezed lemon juice
  • 1 tablespoon dried oregano
  • 1/2 teaspoon freshly ground black pepper
  • 4 chicken breasts boneless, skinless

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber peeled, seeded, and diced
  • 1 teaspoon fresh dill
  • 1 teaspoon lemon juice
  • salt and pepper to taste

Assembling the Gyros

  • 5 slices flatbread
  • heart of romaine lettuce cut into slices
  • red onion thinly sliced
  • tomatoes sliced
  • kalamata olives
  • banana peppers or pepperoncinis, sliced
  • feta cheese crumbled
  • fresh dill

Instructions

Grilling Method

  • Cut up chicken into cubes and place in a large resealable plastic bag. Mix all marinade ingredients in a small bowl. Pour marinade over the chicken, seal, and refrigerate for at least 1 hour.

  • Skewer chicken (remember to soak your skewers if they are wooden) and place on grill over medium-high heat, turning 1/4 turn every couple minutes. When chicken is cooked through and juices run clear, remove from heat.

  • For best results, remove chicken from skewers and wrap tightly in foil. Allow to rest for 5-10 minutes before serving.

  • Combine all tzatziki ingredients in a bowl and mix together. If you want a more smooth sauce, you can blend the sauce in a food processor. Store in the fridge until ready to eat.

  • Once the chicken is done, assemble the gyros by placing a flatbread down and topping with chicken, tzatziki sauce, and any other toppings you prefer.
