Ingredients

For the salad:

  • 5-6 cups spring mix lettuce
  • 1/2 cup mandarin oranges
  • 1/3 cup dried cranberries
  • 1/3 cup pomegranate seeds
  • 1/3 cup Feta cheese
  • 1/2 cup candied pecans or walnuts

For the Creamy Poppy Seed Dressing:

  • 1/3 cup mayonnaise
  • 1/3 cup Greek yogurt
  • 4 tablespoons sugar
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons poppy seeds

Instructions

For the Creamy Poppy Seed Dressing:

  • Combine all ingredients in a small bowl.
    Glass mixing bowl with poppyseed dressing ingredients and whisk on the side.
  • Whisk until smooth. Store in the fridge until ready to serve.

For the Salad:

  • Place the Spring Mix in a large bowl.

  • Top with remaining ingredients.

  • Toss salad together.

This Christmas Salad is so versatile! You can add or subtract as many ingredients as you wish. Here are some ideas of how you can switch it up:
  • If you don't love Pomegranate seeds try strawberries, roasted beets, red onions, or raspberries for pops of red color.
  • Add diced red or green apple slices for more crunch, color, and flavor!
  • Turn this Christmas Salad into a summer supper with pineapple and sliced grilled chicken on top.
  • Toss in a handful of baby spinach leaves for more greenery.
  • Substitute the feta cheese for goat cheese, cubed mozzarella, blue cheese, or ricotta cheese for a different taste.
