Hot Honey Pizza

- 10-12 ounces pizza dough (homemade or store bought, see notes above)
- 4 tablespoons butter (divided)
- 1 clove garlic (crushed)
- 1/2 cup heavy whipping cream
- 1/4 cup freshly shredded parmigiano reggiano (or freshly shredded parmesan cheese)
- 1 cup finely sliced yellow onion
- 1/4 teaspoon salt
- 1 tablespoon water
- 1/4 cup flour (or as needed for flouring surfaces)
- 1 cup shredded mozzarella cheese
- 1 ounce sliced prosciutto (about 4-5 slices)
- 1/3 cup cooked, crumbled Italian sausage
- 1/3 cup fresh ricotta cheese
- 1/3 cup fresh mozzarella cheese
- fresh chopped basil (to taste)
- 1/4 cup hot honey (or to taste)
First, preheat your pizza pan, pizza stone, or pizza steel in a 500℉ oven (if you are using a regular baking sheet, preheat the oven but not with the pan in it). While it is heating start preparing the sauce. Heat 2 tablespoons butter in a small saucepan over medium heat. When melted, add garlic and simmer for about 30 seconds. Whisk in cream and simmer for 1 minute. Reduce heat to low and whisk in parmesan cheese. Keep whisking until smooth and creamy. Set aside to cool and thicken. Next, caramelize the onions. Heat 2 tablespoons butter in a non-stick pan. Place onions in the pan and sprinkle with 1/4 teaspoon salt. Heat over medium heat for about 5 minutes of until the edges of the onion starts to brown. Add 1 tablespoon of water, cover, and reduce heat to low. Heat for 15 minutes, stirring occasionally until onions become soft. Add a little more water if needed to keep from sticking. Remove cover and continue to cook on low until all the water evaporates. Set aside until ready to use. Roll out pizza dough to 12" in diameter on a floured surface. Place on a floured wooden pizza peel. Poke a few holes in the crust with a fork to keep it from rising too much in the oven.
Slide the pizza dough directly onto the preheated pizza stone/steel in the oven and bake for about 3 minutes or until dough starts to puff up.If you are using a baking sheet. Line the baking sheet with parchment paper and place the dough on the sheet. Heat for 5 minutes or until dough puffs up. Remove pizza from the oven and place back on the wooden pizza peel. If you are using a baking sheet, you can just keep the pizza on the baking sheet and remove the whole thing from the oven. Spread sauce evenly over the pizza crust and top with shredded mozzarella cheese. Tear prosciutto into smaller pieces and place over the pizza along with the cooked sausage crumbles.
Spoon drops of ricotta (about 1 tablespoon in size) randomly over the top. Tear off pieces of fresh mozzarella and place in any empty spaces over the pizza. Add caramelized onions evenly over top.
Place back in the 500℉ oven for 3-5 minutes or until crust is lightly browned and cheese starts to melt. Change oven to "broil" and broil for 1-2 minutes until crust gets a few browned spots and cheese is bubbly. Watch very closely while broiling to prevent burning.
Remove from oven and allow to rest for a minute or two.
Slice and add fresh basil. Drizzle hot honey over the top and serve!
Makes 1 12" pizza
Reheating leftovers: Store leftover slices in an airtight container in the fridge for up to 3 days. For best results, reheat in the oven or air fryer until the crust is crisp and the cheese is melty. Add an extra drizzle of hot honey before serving to bring the flavors back to life.
