Pineapple Fried Rice

This easy Hawaiian-style pineapple fried rice is sweet, savory, and a fun switch from plain white rice. It goes great with any Hawaiian-style meal!

Ingredients

  • 1 ½ cups Jasmine rice uncooked
  • 2 ¼ cups water
  • 2 tablespoons vegetable oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 cup frozen carrots and peas thawed and pat dry
  • 1 ½ cups pineapple tidbits fresh or canned, pat dry
  • 2/3 cup cubed ham or Spam (optional)
  • 3 eggs beaten
  • 3 tablespoons soy sauce
  • green onion for garnish

Instructions

  • Cook 1½ cups uncooked jasmine rice in 2¼ cups water in a rice cooker, or follow the package instructions.

  • Place cooked rice on a sheet pan to allow it to cool for at least 30 minutes. You can also cool to room temp for a few minutes and throw it in the fridge or freezer to cool faster.
    Note: You can also use 4 cups of cooked leftover rice from a previous day. Leftover rice actually works best for this recipe!

  • Heat vegetable oil in a wok or skillet over medium-high heat. Add onions to the hot oil and stir until soft and clear. Stir in garlic and cook 30 seconds until fragrant.

  • Add peas, carrots, and pineapple and cook until veggies are heated through. Add cubed ham or Spam if desired (optional).

  • Stir in beaten eggs. Cook until eggs are scrambled and firm.

  • Add the cooled rice and stir-fry over medium-high heat for 3–4 minutes. Stir in soy sauce, one tablespoon at a time. (you can always add more so don't overdo it). Serve immediately.
