Shredded Pork Tacos and Quesadillas

For a delicious meal, try these tasty Shredded Pork Tacos and Quesadillas! It’s a great way to use leftover Kalua Pork!  Last night we made Kalua Pork and we had quite a bit left over so we made two more meals out of it, these delicious tacos and quesadillas! They were both amazing! What a great way to use up leftovers!

Shredded Pork Tacos and Quesadillas

Ingredients

    For Shredded Pork Tacos:
  • Shredded Kalua Pork HERE
  • Rice (leftover from the Kalua Pork dinner)
  • Salsa
  • Avacado
  • Lime
  • Sour cream
  • Cilantro
  • Warm corn tortillas
  • For Shredded Pork Quesadillas:
  • Shredded Kalua Pork HERE
  • Flour tortillas
  • Monterey Jack cheese, shredded
  • Cilantro

Instructions

    For Shredded Pork Tacos:
  • Layer as follows on the corn tortillas: rice, Kalua pork, salsa, avacado, a squeeze of lime juice, sour cream, then garnish with cilantro!
  • For Shredded Pork Quesadillas:
  • For these, just prepare like you would any quesadilla... tortilla, cheese, pork, cilantro... fold over, heat in skillet and serve when cheese is melted. You know the drill. Serve with salsa and sour cream.
