I love making foil packets in the summer. It is so easy to toss all the ingredients into foil, wrap them up, and throw them on the grill. The kids even like to help make their own! These Hawaiian Chicken Foil Packets are definitely one of my favorite flavor combinations. With tender chicken thighs marinated in homemade teriyaki sauce, sweet and tangy pineapple, and the added flavor of peppers and onions, you really can’t beat it.

Ingredients in Hawaiian Chicken Foil Packets

For the Foil Packets

  • Boneless, skinless chicken thights
  • Fresh pineapple
  • Red bell peppers
  • Onion

For the Marinade

  • Soy sauce
  • Brown sugar
  • Pineapple juice
  • Garlic
  • Ginger

Step by Step Instructions

Preparing the packets

  • First you want to make your marinade. Combine soy sauce, brown sugar, pineapple juice, garlic and ginger. Then, place your chicken thighs in an airtight container and pour the marinade over the chicken. Seal and store in the fridge for at least 2 hours, or overnight if you can. The longer the better!
  • When you are ready to assemble the packets, cut up the onion, pepper, and pineapple. Lay out a sheet of foil and place one chicken thigh, pineapple slices, and a few peppers and onions on top of the foil. Drizzle some extra marinade over the top.
  • Fold up the foil pack so the food is entirely covered. Make sure sauce isn’t leaking out of any edges.

Grilling the packet

  • Grill over medium high heat for 20 minutes. Then flip the packets over and cook for about 10 more minutes, or until the internal temperature of the chicken reaches 165 degrees.
  • Remove food from the foil packet onto a plate and serve with rice. Top with soy sauce, teriyaki sauce, or bbq sauce if desired. Enjoy!

How do you fold a foil packet?

First of all, when cooking food in a foil packet, be sure to use heavy duty aluminum foil. Once the food is placed in the middle of the packet, bring up two sides of foil over the filling so the edges of the foil meet. Make a tight fold or roll, sealing the edges. Do you flip foil packets?

When grilling a foil packet, you should flip it about halfway through cooking to ensure the food cooks evenly.

Can you put foil packets directly in fire?

If you are cooking in a fire pit, don’t place foil packets directly in the flames of the fire. Heat coals in the fire and cook the packets on the heated coals. You can also wait until the firewood burns long enough to break down into coals, and then place the packets on the heated coals to cook.

What else can I put in a foil packet?

In addition to chicken thighs, chicken breasts and ground beef patties can be cooked in a foil packet. Sprinkle the meat with salt and black pepper. All kinds of vegetables can be cooked with the meat, including carrots, mushrooms, zucchini, red onion or green onion, broccoli, cauliflower – really any veggies that can be roasted in the oven can be used in a foil packet.

  • In a large bowl, whisk all ingredients together until combined. Pour over chicken in a ziplock bag or other airtight container and marinate for at least two hours or overnight if possible.

Assemble the Foil Packets and Grill

  • Lay out one sheet of heavy duty foil. Place one chicken thigh, two pineapple rings or a few pineapple chunks, and some pepper and onion strips. Drizzle some extra sauce over the top if desired.
  • Wrap foil up tightly and seal edges so none of the juices leak out.
  • Grill over medium high heat for 20 minutes. Then, flip the packets and grill for about 10 more minutes, or until the internal temperature of the chicken in 165 degrees. Remove from packets and serve with rice. Top with soy sauce, teriyaki sauce, or barbecue sauce if desired.
