Fresh Strawberries in a Pie
All summer long I am craving fresh fruit! There’s just something perfect about a sweet and tart and juicy piece of fruit when it is hot outside. So, naturally, I am obsessed with this Fresh Strawberry Pie recipe. Fruit pies make a great addition to any BBQ, potluck, or dinner party. Your friends and family will be begging you for the recipe!
Ingredients in Strawberry Pie
- our perfect homemade pie crust – baked and cooled
- fresh strawberries – hulled and sliced
- water
- corn starch
- sugar
- salt
- whipped cream or ice cream for topping
Step-By-Step Instructions
- First you want to start with your pie crust. You can make this step as involved or as easy as you want. I usually use our Perfect Pie Crust recipe, but I have definitely used store-bought pie crust before. No judgement here! Bake up your pie crust and let it cool while you make the filling.
- Hull and slice your strawberries. Take about one cup of the berries and lightly crush them. Add them to a saucepan with ¾ cups water.
- Bring to a boil, occasionally stir, and let boil for 3 minutes. Remove the berries from the juice, and leave the juice in the pot. Whisk in the cornstarch and sugar. Simmer until it becomes thick. Remove from the heat.
- Add the rest of the sliced berries to a large bowl. Pour the glaze over the berries and mix until the berries are coated.
- Pour the filling into the pie crust. Refrigerate until the filling sets, about 4 hours at least.
- Lastly, top with whipped cream or ice cream and serve.

No, this pie is meant to be a fresh strawberry pie so a lattice top wouldn’t work as you aren’t meant to bake the strawberry pie filling. Bake the pie shell or use a store-bought pie crust.

How to Make Fresh Strawberry Pie

Ingredients
- 1 pie crust baked and cooled
- 6 cups strawberries hulled and sliced
- 3/4 cups water
- 2 tablespoons cornstarch
- 3/4 cups sugar
- 1/4 teaspoon salt
- whipped cream or ice cream for topping
Instructions
- Take 1 cup of the strawberries and lightly crush them. Add them to a pot with the water and bring to a boil.
- Boil for 3 minutes and then remove the berries. Leave the juice in the pot. Whisk in sugar, cornstarch, and salt. Simmer over medium high heat until the mixture thickens.
- Remove from heat cool in the fridge until glaze is thickened, about two hours.
- Add the rest of the sliced berries to a large bowl. Pour the cooled glaze over the top and mix until all the berries are coated. Pour the filling into the pie crust.
- Refrigerate until the filling is set, about two hours.
- Top with whipped cream or ice cream and serve.

- For a little added sweetness, sprinkle a little sugar on the outer edge of the pie crust before cooking.
